Pannekoeken or pannenkoeken?

Dear Scott,
In reply to your e-mail, some info on a tasty subject. The Dutch spelling changed in 1994 by law and since then we have to write pannenkoeken, because it’s a compound. The first part –pan- has as plural –pannen-. Even if it’s baked in ONE pan the plural rule prevails. I still can not get used to it....

My recipe for pancakes

Nowadays most people bake their pancakes at home with a popular instant pannekoekenmix. So they do not need to have yeast or baking powder at hand. I usually use the Van Pelts secret ingredient.

Here's my recipe for 'pannekoeken'-batter (enough for appr. 10 in a medium sized pan)

500 gr flour or whole wheat flour
1 litre milk
3 medium sized eggs
1/2 tsp salt (or none, esp. if you add bacon!)
1/4-1/2 bottle of beer *)
1 tblsp oil (if you add a little oil you usually only need tot put a oil in the pan for the first batch.


Put the flour in a bowl (zif if it if you want to start without little lumbs), make small hole in the middle and start with mixing in the eggs one by one, mix in a quarter to a half a bottle of beer, add some salt if prefered. Good beating adds air! Gradually pour in all milk and start stirring, making a smooth batter.

*) Beer the secret rising ingredient from the Van Pelts! Leendert always says he got that from Oma. Don’t worry the alcohol will evaporate, no one gets drunk ;-))


Poffertjes

Pretty much the same recipe as for pancakes, usually a little bit thinner by putting in more milk, esp. if you want to poor it from a plastic bottle, see example below.
